We all know delicious cuisine is one of the many things we take pride in at Palace Resorts. Joining Cozumel Palace is Executive Chef Erick Sanz. Erick has been making stomachs happy for over thirteen years. He started his career in Sussex, England at Food for Friends Restaurant and later became Head Chef at Dalis Restaurant. After five years in England, he decided to get back to his roots and apply his European training in North America. Sanz was the Sous Chef at Riu Hotel & Resort in Cancun and later worked as Banquet Chef at the Banyan Tree Mayakoba n Riviera Maya, where he supervised food execution and presentation for all events. “The most active ingredient in a recipe is passion”, said Executive Chef Erick Sanz and with this ingredient he is ready to once again elevate Cozumel’s Palace dining experience.
